Easy Chia Pudding

I don't know about you but I'm such a savoury breakfast gal. Eggs all the way - fried, hard boiled, scrambled (not poached as I can't poach an egg to save myself).

But every now and then, I want to shake it up a bit. And chia pudding is my go to alternative.

I know for so many of my clients, they prefer a sweet rather than savoury breakfast. Chia puddings are SUCH a good option to boost fibre and protein to help avoid the energy crash that can come later in the day.

This is my go-to recipe as it's so versatile.

I find it quicker to get out my kitchen scale and just weigh everything so you’ll find the weights in brackets if you prefer to do the same!

INGREDIENTS:

90ml milk of choice (90g)

2 TBSP chia seeds (25g)

1/2 cup yoghurt (120g)

1-2 tsp honey or maple syrup (10g)

1/2 cup frozen berries (or fruit of choice) (70g)

+ any optional extras:

e.g. vanilla essence, cocoa, instant coffee, protein powder, collagen

METHOD:

The night before you plan to eat it, add all the ingredients to a glass jar.

I like to add them in the order listed above to help prevent the chia seeds from sticking to the bottom of the jar.

Pop on the lid and give it a good shake.

Place the jar in the fridge overnight (or for at least 15-30 minutes) and enjoy!

You can make up to five days worth if you’d prefer do some batch preparation.

Let me know if you try it!
